"The Biggest Loser" White House Salad Recipe

The NBC weight-loss competition reality show The Biggest Loser filmed an episode at the White House during season 8. The episode aired November 3, 2009.

The nine remaining "Biggest Loser" contestants were flown to the nation's capital for this episode. There, they met and talked with congressional folks about diet and health and toured First Lady Michelle Obama's organic garden. They worked with the White House chefs to first harvest vegetables, then create a thrifty, organic salad from the bounty of the White House garden.
White House Food Initiative Coordinator Sam Kass oversaw the vegetable harvesting from the White House Kitchen Garden. Then, the show's participants went into the White House kitchen, with Kass and Executive Chef Cris Comerford, to prepare the veggies for their giant salad.
Here is the resulting low-cal, frugal salad that was created on the show, which uses honey in its fresh homemade salad dressing.
This recipe serves approximately 50 people if the salad is served as a side dish, 4 to 6 people if it's served as a main dish.
"The Biggest Loser" White House Salad
Ingredients
- 1 head of fresh lettuce, washed, dried, and cut into bite-sized pieces
- 1 cucumber peeled, and cut into bite-sized pieces
- 2 fresh in season tomatoes, washed and cut into bite-sized pieces
- ¼ red onion, peeled and cut as thinly as possible
- 1 bunch fresh basil, washed and chopped into big pieces
- 4 T. lemon juice
- 1/3 c. olive oil
- 1 tsp. honey
- Salt and pepper to taste
Preparation:
Combine lettuce, cucumbers, tomatoes, and onions in large mixing bowl.
In a sealable container, combine the olive oil, lemon juice, honey, and salt and pepper to make the salad dressing. Cover the container and shake vigorously. Add dressing to salad and serve immediately.
Serves approx. 50 as a side dish, 4-6 as a main entrée.
