Casey Kasem's Vegetarian SoupCompiled by Vicki McClure Davidson
Former radio disc jockey and music historian Casey Kasem has been a strict vegetarian for decades, long before it became chic to do so. Born in Detroit, Michigan, he originally wanted to be a baseball player, but stumbled into radio work. Famous for his weekly radio show "America's Top 40" radio program, he counted down the top 40 hit songs of each week and gave his young, hip, listening audience loads of fascinating rock trivia and anecdotes.
He created the show's franchise and hosted the show from 1970 to 1988 and then from 1998 to 2004. Between 1989 to 1998, he was the host of "Casey's Top 40," "Casey's Hot 20," and "Casey's Countdown." Casey had his hand on the pulse of American pop and rock hits for longer than three decades. His tag line at the end of each "America's Top 40" show, with his wonderfully distinctive voice, was, "Keep your feet on the ground and keep reaching for the stars." A little known fact about Casey is that he has also supplied the voice of Shaggy in the animated series Scooby-Doo, and has done voice work for other animated series since the late 1960s, including the popular 1980s series Transformers. Some early Sesame Street segments also used his voice.
The youngest member ever to be inducted into the Radio Hall of Fame in 1992, Casey also has his own star on the Hollywood Walk of Fame. He received the first-ever Lifetime Achievement Award from Billboard Magazine in 1997. Few people realize that Casey is of Palestinian/Lebanese heritage and has his own website devoted to famous Arab-Americans.
Casey's flavorful vegetarian soup is chock-full of vitamins from low-cal vegetables—the perfect meal anytime—whether it's winter or summer. Easy to make and easy on the pocketbook, kids will love helping to make this one. Many of the ingredients for this soup can be found at the 99-cent/dollar stores.
- 2 c. water (or vegetable broth)
- 1 box frozen green beans (or 3/4 lb. fresh green beans)
- 1/2 lg. (or 1 whole small) cauliflower, cut into florets
- 3 lg. chopped carrots
- 4 lg. chopped zucchinis
- 6 stalks sliced celery
- 2 to 4 lg. yellow onions, or a 12-oz. bag of frozen chopped onions
- 1 16-oz. can peeled tomatoes
- 1 46-oz. bottle or can of V-8 juice
- 1/2 tsp. thyme
Mix all ingredients in a heavy pot, bring to a boil on the stove, and then reduce it to a simmer for about 15 minutes.
This vegetarian soup recipe makes a large pot of soup that will keep for 2 weeks in the refrigerator, covered.Makes about 6 - 8 servings.
