Martina McBride has a powerful voice, there's no denying that. She's an American country music singer and songwriter, best-known for her inspirational songs. Originally a rock singer, she prefers singing country because rock was too rough on her voice. She's been called the "Céline Dion of Country Music" because of her big-voiced ballads and soprano range.

Winner of many country music awards, she started her career when she was about 9, singing with her family's band. Syndicated radio and Fox News Channel host Sean Hannity uses her hit song "Independence Day" to start off his radio show every hour each day.

Martina also works with several charities. She is the spokeswoman for the National Domestic Violence Hotline, as well as the National Network to End Domestic Violence and National Spokeswoman for the Tulsa Domestic Violence and Intervention Services.



Martina's recipe for this homemade tortilla soup is easy, spicy, and satisfying. And cheap to make, which makes it doubly good. Perfect for those cold, winter nights.

In a stockpot, cook onion and garlic in 4 T. oil over medium heat, stirring until soft. Increase heat and add chilies, stirring to avoid burning. Cook for 1 minute or until soft. Remove one chile and cut into 10 strips; reserve for garnish.

To the pot, add 4 c. water and tomatoes and bring the liquid to a boil. Simmer mixture for 30 minutes.

In a blender, purée the mixture in batches.

In a pot, heat 2 T. of remaining oil over medium heat until hot but not smoking. Return the purée and cook, stirring for 5 minutes. Stir in broth, salt, and pepper. Simmer soup for 15 minutes.

In a large skillet, heat half of the additional oil over high heat until hot. but not smoking. Fry the tortilla strips in batches, stirring for 30 seconds until crisp. Transfer to paper towels to drain.

Divide fried tortillas among 10 heated bowls. Pour the soup over them and top each one with one strip of the reserved chile.

Sprinkle each serving with some shredded cheese and top soup with sliced avocado wedges. Note: the avocado is optional. This recipe can easily be halved or doubled.

Serves 10.
