Frugal Celebrities' Recipes

Award-winning country singer Trisha Yearwood has been a star early on in her music career. Her series of major hits have made her a three-time Grammy winner, a two-time Country Music Association Awards winner, and a two-time Academy of Country Music Awards winner. Three of her albums, Inside Out, (Songbook) A Collection of Hits, and Jasper County, have been in the Number 1 spot on the US country music charts.

She has been married to her career mentor, Garth Brooks, since 2005 (he is her third husband, and she is his second wife).

Trisha has always loved to cook and feed loved ones, which inspired her to write and publish her first cookbook in 2008: Georgia Cooking in an Oklahoma Kitchen (Recipes from My Family to Yours). The book includes more than 120 recipes for Southern dishes, including frugal, down-home favorites like Stuffed Pork Chops, Chicken Tortilla Soup, Banana Pudding, Breakfast Sausage Casserole, Blackberry Cobbler, and Pimento Cheese Spread. Some of Trisha's family members also have donated recipes that are featured in the cookbook, such as Gwen's Fried Chicken with Milk Gravy (Gwen's recipe title sounds intriguingly frugal!)


 

Trisha's recipe below for chicken pizza was featured in her fabulous 2010 cookbook Home Cooking with Trisha Yearwood: Stories and Recipes to Share with Family and Friends. Cheaper than ordering out for pizza, and easy enough to make. Kids will love this and can help in the assembly of the pizzas. This recipe makes two chicken pizzas.

 

Trisha Yearwood's Chicken Pizza

 

Preheat the oven to 350 deg. F.

Roll the pizza dough out and fit onto two 15-inch pizza pans. Drizzle 1 tablespoon of olive oil and 1 teaspoon of garlic on each pizza crust, followed by 1/2 cup each of the mozzarella cheese and 1/2 cup of the cheddar cheese. Scatter half of the bell pepper, sliced onion, chicken, and bacon on top of the cheeses.

Sprinkle another 1/2 cup mozzarella cheese and 1/2 cup cheddar cheese over each pizza and drizzle each pizza with 1 tablespoon more of olive oil. Bake the pizzas for 20 to 25 minutes, or until the crusts are lightly browned.

Slice each pizza into 8 pieces.

Serves 12 - 14.
