Trisha Yearwood's Warm Feta Dip with Artichokes

Frugal Celebrities' Recipes

Award-winning country singer Trisha Yearwood has been a star early on in her music career. Her series of major hits have made her a three-time Grammy winner, a two-time Country Music Association Awards winner, and a two-time Academy of Country Music Awards winner. Three of her albums, Inside Out, (Songbook) A Collection of Hits, and Jasper County, have been in the Number 1 spot on the US country music charts.

She has been married to her career mentor, Garth Brooks, since 2005 (he is her third husband, and she is his second wife).

Trisha has always loved to cook and feed loved ones, which inspired her to write and publish her first cookbook in 2008: Georgia Cooking in an Oklahoma Kitchen (Recipes from My Family to Yours). The book includes more than 120 recipes for Southern dishes, including frugal, down-home favorites like Stuffed Pork Chops, Chicken Tortilla Soup, Banana Pudding, Breakfast Sausage Casserole, Blackberry Cobbler, and Pimento Cheese Spread. Some of Trisha's family members also have donated recipes that are featured in the cookbook, such as Gwen's Fried Chicken with Milk Gravy (Gwen's recipe title sounds intriguingly frugal!)


Trisha's recipe below for warm feta dip with artichokes appeared in the January 2009 issue of Good Housekeeping magazine. I've found that several of the 99-cent/dollar stores in our area carry canned artichoke hearts, which otherwise can be rather pricey in grocery stores. Dollar stores in your region may also carry them.

Preheat oven to 350 degrees F. In a medium bowl, stir together artichoke hearts, feta cheese, mayonnaise, Parmesan cheese, pimientos, and garlic until combined.

Transfer mixture to small casserole or glass pie plate and bake, uncovered, 25 minutes or until lightly browned.

To serve, place casserole on a larger platter, and surround with Melba toast or pita chips.

Makes about 1-2/3 c. dip, or 8 servings
