Chefs' Cooking Secrets | Creamy Potato Soup, with Chef Jason Hill | Video

Frugal Celebrities Recipes

One of America's favorite comfort foods, potato soup is served in restaurants from coast to coast, from steakhouses to country diners. Chef Jason Hill of Chef Tips shows how to make a homemade creamy potato soup recipe that's dressed up with smoked Gouda cheese and rivals the flavor and texture of expensive restaurant soups.

If you can't find smoked Gouda, or if it's too expensive for your food budget, a steakhouse secret that Chef Hill shares is that you can still get that creamy texture with a processed cheese such as Velveeta. Don't skip the cheese, since it's an important ingredient to get that desired creaminess.

Creamy Potato Cheese Soup

Turn stock pot on medium high. Melt butter in the stock pot. Add celery, onion, carrots. Cook down until onions are translucent. Add basil and garlic-shallot purée. After 3 minutes, add diced potatoes and stir another 3 minutes.

Carefully pour in 6 cups chicken broth. Boil for 20 minutes, then stir in a roux made from 4 tablespoons flour and 4 tablespoons butter.

Wait a few minutes for the soup to thicken slightly. Add cream. Whisk and simmer for 20 minutes.

Slowly stir in cheese and melt it down. After the cheese has melted, pour into warmed bowls and season with salt and fresh cracked pepper.

Serves 4 to 6.

A crusty loaf of French bread and some fresh, in-season fruit on the side and you've created a filling, comforting meal that can be served any time of year for the family or friends, at a fraction of the cost of dining out.

Here's the video demo showing how to make the soup:
